Memories, traditions, and a series of events in 2021 led to the inception of Cuz'n Vinny's Homemade Pasta Company, referring to the comedy "My Cousin Vinny".
We use #1 semolina, water and fresh farm eggs. Our vision is to use clean, non-gmo products without chemicals, and preservatives. Early 2022, to keep up with demand and to improve the quality of pasta, Cuz'n Vinny upgraded to an extruder machine using brass dies that give the pasta ridges. The rougher surface allows the sauce to cling better to pasta. Nonstick dies and hand cut pasta have a smoother end product and holds its shape better. We opted for a product that will taste better because it is filled with tiny imperfections that capture the flavors of sauce or other ingredients.
We make fresh pasta which can be refrigerated up to 2 weeks. Otherwise, can be frozen.
Nonna Rose is Cuz'n Vinny's maternal grandmother. Born in 1887, she left Italy via Naples on the Ship SS Patria on September 20, 1899. She arrived at Ellis Island October 6, 1899 with her parents and many siblings. The family moved to and remained in the Phillipsburg, NJ and Easton, PA area.
Cuz'n Vinny fondly remembers his Italian heritage, such as lasagna with hard boiled eggs. He remembers Nonna making pappardelle Bolognese almost every Sunday and is still his personal favorite.
