Corned beef is a salt-cured beef brisket, traditionally made by curing the meat with large rock salt kernels (called "corns," hence the name) and brine.
The meat is seasoned with pickling spices, resulting in a tender, pink-hued product with a distinctive salty, spiced flavor popular in sandwiches and with cabbage.
The most common sandwich is the Open Faced Reuben.
